CAN the humble dab preserve the fish world from extinction?
Probably not, but a popular Birmingham restaurant hopes higher consumption of this abundant North Sea dweller will help base the decline of our vulnerable fish stocks.

James, who has worked at Claridges, The Ritz and Mosimann's, says it's been an "invigorating challenge" to locate new fish and completely new recipes. "I have been a big fan of these fish for some time,Inch says James.
"A lot of cooks I know love sardines and spanish mackerel and richly flavoured striper. There are so many great fish that we don't use. We have got a huge number of crabs during this country and we send many of them to Spain. It's nutty."
Many of the fish used by Selfridges are so called bycatch   options that are caught unintentionally as well as which, until now, had no commercial value. Instead of discarding your fish (about 27 , 000, 000 tons is thrown returning each year) the bycatch is building its way to the kitchen table.
James says: "A lot of your fish we are serving from Selfridges is from UK shores and the most is bycatch. They are delicious but they are very expensive."
